Mark is not hip to the meatless Mondays. Just the phrase "Meatless Monday" brings a snarl to his lip and a snarkiness to his tone of voice as if to say, "Me? Go vegetarian? Puh-lease!"
But the other day, we were watching "The Best Thing I Ever Ate" on the Food Network. And Mark's mind opened. A smidge.
The episode's theme was breakfast, and we watched chefs rave about blueberry ricotta pancakes, corned beef hash and "wicked spicy" hot chocolate. One of the final chefs to rave was Susan Feniger, and she was a fan of a dish called "Pasta Mama." As a working chef at her restaurant, it's not often that she's awake for breakfast but when she is, she goes out for Pasta Mama.
What is Pasta Mama? It's fresh pasta scrambled with eggs, garlic, parsley, Parmesan cheese and seasoning.
Mark's eyes got big and I could almost see him salivate as Susan Feniger explain her love for the dish. I couldn't blame him either - it looked good.
"You know," I said. "That would make a good meatless Monday dinner."
"Yeah, I guess. Wanna try it?"
