If you'd like to replicate the peach-blueberry pie I wrote about recently, you need 6 peaches and a pint of blueberries. Mix them up with:
- 1 ½ to 1 2/3 cups of sugar
- ¼ cup of flour
- 1 ½ teaspoons of ginger
- ¼ teaspoon of nutmeg
- About 1 tablespoon of lemon juice
- ½ teaspoon of salt
For the crumb topping, you'll need:
- 1/2 cup sugar
- 1/2 cup flour
- Pinch of salt
- 1/4 cup butter, cold
Make sure you bake on cookie sheet – this pie got plenty juicy.
P.P.S. If you happen to have some leftover blueberries, try throwing them into lemon Jell-O. A slightly strange combination at first glance, but really delish.
