Wine pairing
Jeanette Merritt, marketing director of the Indiana Wine Grape Council, which sponsored the people’s choice award, suggested the following dish as one that would go especially well with Mango Mania.
Pork Chops with Mango-Lime Salsa
1 (12-ounce) bottle mango fat-free dressing and marinade
2 cloves garlic, crushed
2 tablespoons lime juice
2 teaspoons fresh ginger root, grated
4 (6-ounce) boneless pork chops, about 1-inch thick
For the salsa:
2 ripe mangoes, diced
1/2 cup red onion, chopped
1/4 cup fresh cilantro, chopped
1/4 cup coconut
2 tablespoons lime juice, fresh
1/4 teaspoon salt
Pinch cayenne pepper
In large self-sealing bag, combine mango marinade, garlic, lime juice and ginger. Add pork chops; seal bag, and marinate in refrigerator for at least 4 hours or overnight.
Prepare medium-hot fire in grill. Remove chops from marinade and discard marinade. Grill chops over direct heat, turning once, for 10 to 12 minutes until internal temperature on a thermometer reads 145 degrees, followed by a 3-minute rest time. Serve with salsa.
For the salsa, in a large bowl, toss together mangoes, red onion, cilantro, coconut, lime juice, salt and cayenne pepper. Can be made up to 2 hours ahead.

Satek Winery nabs prize for Mango Mania wine

Satek Winery has been entering the Taste of Elegance competition in Indianapolis for five years with no winners. Last week, the Fremont winery took home its first prize from the competition for its Mango Mania wine.

Satek won the people’s choice award Feb. 7 at Taste of Elegance, which is sponsored by Indiana Pork. The event features top chefs from around Indiana who compete by including pork in a dish, Satek marketing director Christina Koher says. The competition also includes wine tasting and wine and food pairings.

“(Mango Mania) is a good food pairing with any sort of pork,” Koher says. “That sort of salty-sweet combination is just decadent.”

The wine is fermented mango juice, and Satek introduced it in 2008 as an experiment. The winery made a batch, which typically lasts six months to a year. It sold out of Mango Mania in seven weeks, Koher says.

Today, the wine is Satek’s No. 2 best-seller.

Reopening

SpoonZ Fro Yo, which opened in August, closed its doors for a week and a half to remodel, and it plans to reopen at noon Friday. The dessert shop redid its floors, repainted and installed glass tile on its frozen yogurt wall. It also added a painted logo on one of its walls.

“We’re just very picky on what we want it to look like, and we just wanted to add some things to give it more pop,” owner Angie Zimske says.

To celebrate the reopening, SpoonZ will hold gift card giveaways for folks who stop in the store this weekend.

Free queso

Qdoba restaurants are offering free queso dip to area high school students for simply showing pride in their school. Students who order from Qdoba and show up in high school gear – hats, shirts or even just a school ID – will get a free small order of chips and queso dip with any entrée and drink purchase.

The promotion, which is under way and runs through April 30, is in conjunction with WJFX FM Hot 107.9; students will earn points for showing their school spirit. The school with the most points at Qdoba will win a dance party hosted by the radio station after spring break.
