  • Summer rolls get veggies in picnic basket
When it comes to packing a picnic basket, sandwiches are almost always the stars of the menu. And why not? They are easy to eat with your hands, pack well and are versatile enough to keep everyone happy.
  • Hearty salad features beef with tang
“Top Chef” watchers: Think all the way back to Season 9. The cheftestants were hot and grumpy in Texas. Paul Qui won, and one chef seemed to get off more ornery one-liners than the others: Edward Lee of 610 Magnolia in Louisville.

Better options
Virgin: Replace rum with pineapple and save hundreds of calories per serving.
Get fresh: Here’s a bright idea – use real berries! Punch up the flavor even more with a hint of balsamic and basil.

Lighter daiquiri

Most daiquiris are cloyingly sweet and filled with booze, but make your own for a much lighter version of this classic cocktail.

Nutrition facts: A 2-ounce portion of frozen daiquiri mix (no alcohol) has 120 calories and more than 5 teaspoons of added sugar. The quality of the ingredients is another sticky issue – most bottled mixers are filled with artificial colors and high-fructose corn syrup. Pour in the rum and it’s another 100-plus calories per shot.

This traditional recipe uses fresh berries. It’s perfectly portioned with less than 160 calories a serving.

Strawberry Daiquiri

Ice cubes

2 parts light rum

1 part triple sec

1 part fresh strawberries, tops trimmed off

Lime juice, as needed

Lime wedges

Sugar

Add to a blender and purée: ice cubes, light rum, triple sec, fresh strawberries and lime juice. Rub the rim of a glass with lime. Roll the glass in sugar. Garnish with lime wedges. Taste and enjoy.
