Deer Park boss visits beer camp

Forget about boot camp. Tony Henry went to beer camp.

The owner of Deer Park Irish Pub, 1530 Leesburg Road, recently found himself in Chico, California, at the Sierra Nevada Brewing Co. headquarters to learn about the beer-making process.

The trip from June 25 to 28 included a tour of the facility and hops farm, a ride around the gardens and eating in the brew pub.

“It was intense,” Henry says. “They made us go into these booths. They blindfolded us and had us taste these beers to see which ones were flat.”

Henry, who is “still bubbling over the experience,” says the campers also developed their own brew recipe and made it. The group came up with a twist on the popular Indian pale ale with an Indian pale lager, which has five kinds of hops.

“So right now that beer is in a fermenting tank, and it will be available,” Henry says. “Sixty barrels have been allocated to the 12 (campers). They’ll actually come back to my premises in four months.”

The beer doesn’t have an official name yet. The group gave Sierra Nevada three choices – Neo Lexicanus, a nod to a hop used; Pilgrimage Pils; and Mirrored Shame.

Klemm to retire

After 38 years in the restaurant business, Mike Klemm is ready to retire.

The owner of Klemm’s Candlelite Café is seeking a buyer for the 1207 E. State Blvd. restaurant, which he has owned for 18 years.

“This has been going through my mind for the last six months,” Klemm says. “My passion is waning, and it’s time for a new person take over.”

Though Klemm isn’t on the grill line too much anymore, he still prepares the pan-fried chicken special on Wednesdays and helps with the pies and soups.

Klemm says he will train his successor to make the restaurant’s specialties and include recipes in the sale.

He is hoping to retire by the end of the year.

Students cook

Cornerstone Youth Center will host its second Culinary and Hospitality Week from Monday to July 18.

This weeklong event provides students in grades 7 through 12 with practical cooking and serving skills, as well as information about careers in the culinary and hospitality industries.

The week features two evening meals under the direction of local chef Michael Bentz with the assistance of IPFW hospitality management students and consultation with Ivy Tech hospitality administration chair Jeff Bunting. They will prepare and serve two four-course meals in a fine-dining atmosphere.

The meals, which are open to the public, are scheduled for 6:30 to 8 p.m. Tuesday and July 17 at the youth center, 19819 Monroeville Road in Monroeville. Advance tickets cost $25 a person; call Cornerstone Executive Director Kent Castleman at 348-2973. There is a maximum of 64 diners per meal.

Loving Café, 7605 Coldwater Road, will be closed from Monday until July 21 for annual maintenance.

•According to plan receipts filed with the Fort Wayne-Allen County Department of Health, Panera Bread is opening a location at 2104 E. Dupont Road, just west of Interstate 69.

The Phoenix, 1122 Broadway, has ended its lunch service. Hours are now 5 p.m. to midnight Tuesday through Thursday; 5 p.m. to 1 a.m. Friday and Saturday; and 10 a.m. to 3 p.m. Sunday.
